Butternut Apple Soup

Here is a recipe of sorts for my Butternut Apple Soup. I used to own a soup cook book but sold it on Ebay so the recipe is only what I remember.

Here is what you need..

Stuff

Heavy Bottomed Soup Pot, Baking Sheet, Blender, Knife, Cutting Board

Ingredient's

1 Big Butternut Squash

2 or 3 Apples (local)

1 Large Spanish Onion

1 Stick of Butter (or olive oil)

2 cloves of Garlic

Chicken Stock (or Vegetable Stock)

Nutmeg, Salt, Pepper, Cayenne, Cinnamon

So here is what you do..

Set the Oven to 375

Cut the Squash in half, clean out the seeds and stuff, and place on a baking sheet, sprinkle with nutmeg, salt, and pepper to taste.. And maybe a little cayenne if you like things a little spicy. Put a little butter in the middle of the Squash cup....

Place in the Oven for 45 minutes or until the Squash is Brown and Smooshy..

Meanwhile chop up the Onion into chunks

Peel the Apple, take out the Core and chop it up into chunks

Crush the Garlic in a Press or Chop it up Fine

OK now you should find a heavy bottomed soup pot

Over medium high heat melt a chunk of butter, and throw in the Onion.. sauté until caramelized (clear and starting to brown) adding butter as you need it.

Add the garlic sauté a minute or two

Add the Apples.. Add some butter if needed..

Things will get a little brown and sticky now... Its at that point where I am afraid of things burning that I add the Chicken Stock (or Veg Stock) and turn down the heat.

When the Squash is done use a spoon to remove the Squash from its skin and put into a separate bowl...

Find a blender.. Add equal parts Squash and Onion mixture into blender..

Blend Smooth in batches and add back to Soup Pot...

Season to Taste...salt, pepper, nutmeg

Simmer for a little while on low heat just to get the mixture together.

Serve Hot.
